CEBU BELLY ROLL
Originating from the Philippine island of Cebu, this roast utilizes the whole pork belly slab, which is deboned and marinated in our special aromatic spices and lemongrass rub. The whole belly is then tied up in a roll after the skin receives a gentle treatment of needle pricking before it is slowly roasted.
Lechon de Leche (Piglet)
Another favorite option, a piglet fed on its mother’s milk. The meat is tender, mild tasting with wafer-thin crispy skin. This Lechon de Leche is marinated in our proprietary recipe of lemongrass, garlic and crushed black pepper.
